A delightfully simple and savory side dish or snack, these Golden Parmesan Courgette Crisps come together quickly and are sure to disappear fast! Thinly sliced courgette rounds are topped with a savory Parmesan and herb mixture, then baked to a perfect golden crispness.

Ingredients
  

  • 3 small to medium Courgettes Zucchini, approximately 750g total weight before trimming
  • 10 tablespoons approx. 2/3 cup lightly packed, or ~60g finely grated Parmesan Cheese
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Dried Italian Herb Mix
  • Olive oil cooking spray for the baking sheet
  • Freshly ground black pepper Optional, for serving

Instructions
 

  • Pre-Oven Setup: Position an oven rack in the central part of your oven. Preheat your oven to 400°F (approximately 205°C). Line a large baking sheet with parchment paper or aluminum foil lightly coated with olive oil cooking spray.
  • Prepare the Courgettes: Wash the courgettes thoroughly and pat them dry. Trim off the ends. Slice each courgette crosswise into uniform rounds, about 1/4-inch thick. A mandoline can be helpful for consistent thickness, but a sharp knife works well too.
  • Arrange Rounds: Place the prepared courgette rounds onto the lined baking sheet in a single layer. They can be close together but should not significantly overlap to ensure even crisping.
  • Mix Topping: In a small bowl, combine the finely grated Parmesan cheese, garlic powder, and dried Italian herb mix. Stir until the ingredients are well distributed.
  • Top the Courgettes: Carefully spoon or sprinkle a thin, even layer of the Parmesan mixture over the top surface of each courgette slice.
  • Bake to Perfection: Transfer the baking sheet to the preheated oven. Bake for 18 to 24 minutes. Keep a close watch during the final few minutes, as Parmesan can go from golden to browned quickly. The crisps are ready when the Parmesan topping is melted, bubbly, and has achieved an appealing light golden-brown hue.
  • Serve: Once baked, remove the tray from the oven. For the best taste and texture, serve the Golden Parmesan Courgette Crisps immediately while warm. If desired, offer freshly ground black pepper for guests to add to their liking.
